Mushroom Pasta
1 small box of linguine
2 cups sliced mushrooms (I used baby bella and shitake)
2 tablespoons olive oil
1 sliced shallot
2 pads (tbsp) of butter
1/2 cup vegetable broth
1/2 cup sour cream
1 tsp salt
1 tsp pepper
Bring water to a boil in a large pot for the pasta and season water with salt. In a large skillet, brown the mushrooms and shallots with the olive oil. Transfer the cooked pasta to the skillet and toss with tongs. Add sour cream, broth, butter, salt and pepper. Toss thoroughly. Garnish with parmesan cheese and parsley. This will make 4 servings.
