My favorite, favorite dinner!
Tortilla Soup.
Tonight, though, I put a new spin on it.
I used my original Tortilla Soup recipe and turned it into this:
Taco Salad Soup with Cilantro Lime Shrimp.
I have to share the recipe.
In a large pot on medium to medium/high heat:
2 tablespoons olive oil
Once the oil is hot toss in:
1/2 of a yellow onion
1 small handful of grape tomatoes cut into 4ths.
2 garlic cloves, minched
When the onions, tomatoes and garlic have softened add:
1 can of black beans
2 ears of corn, corn cut off, of course
3-4 cups of chicken broth (low sodium and organic)
Bring that to a simmer.
Add a handful of chopped cilantro.
Save some for the shrimp.
Squeeze a lime into the soup and save some for the shrimp.
Salt and pepper.
To taste... actually add, stir and taste. Then adjust.
Line the bottom of your bowl with lettuce.
Top with:
Avocado...
...and cheese.
Cilantro Lime Shrimp:
-Shrimp (however much you want)
-Cilantro
-Salt & Pepper
-Olive oil
Mix it all up and cook it!
All of that in a bowl produces pure delight.
